Did you know that elderberries have been used around the world for centuries as a natural remedy? The small but mighty berries are an excellent source of vitamin A, potassium, phenolic compounds, vitamin C, and fiber. They are also rich in antioxidants, including anthocyanins and quercetin. These nutrients and antioxidants may help boost the immune system, reduce stress, lower inflammation, and support healthy cholesterol levels. Research has shown that elderberries can help relieve cold and flu symptoms. A recent study from Washington State University has been in the news for finding yet another potential benefit: drinking elderberry juice for weight management.  

With so many benefits, it’s no wonder home gardeners are eager to grow their own elderberry plants. The expert growers at Nourse Farms have put together some helpful tips to set you up for success. 

THE MOST IMPORTANT THING TO KNOW ABOUT ELDERBERRY

Raw elderberries can be toxic because they contain cyanide compounds. For safe consumption, elderberries MUST be heat-processed. When heat-processed, the cyanide compounds will evaporate out of the berries. Cooked elderberries are safe to eat, and the elderberry blossoms are edible!

Berries and blossoms can be utilized for:

Zones: Samdal: 3–7, Samyl: 3–9

Soil pH: 6.0–6.8

Site Selection: Choose a sunny, weed-free location! Plants may tolerate partial sun.

Spacing: 3–6 feet in row, 10–12 feet between rows

Important Things to Know

Elderberry shrubs have lovely foliage and large, creamy-white flower clusters; they are great in the landscape as ornamental plants or hedgerows. While they can reach 12 feet, they tolerate pruning well to maintain a smaller size for a modest home landscape.

Elderberry plants are generally free of pests.

Elderberry plants will fruit in the second year and those canes should be removed late that fall, and every fall thereafter you will cut out the fruiting canes.

Helpful Tip

Birds absolutely love elderberries, and an unprotected bush can be stripped clean as soon as berries turn color! Nourse Farms growers strongly recommend using netting for protection.

A newer cultivar, this variety produces large clusters of juicy, flavorful fruit. The flavor is sweet and earthy.

This variety has exceptionally high-quality flowers. This variety has a vigorous, bushy habit similar to Samdal but less dense.

CROSS POLLINATION

For a successful elderberry harvest, both Samdal and Samyl varieties are needed for cross-pollination. Samdal produces abundant berries, while Samyl focuses more on blossoms. To maximize yields, we recommend planting a ratio of 5 Samdal to 1 Samyl.
